I dont know about simplify3d, but it should have fan speed control, Because that's a basic 3d printer function. But cura has it under Cooling, and if it doesn't show up click the gear and search for fan speed its there I promise.

So I had the same issue, now whether or not it fixes it for you or if you even want to I swapped over to verts 2.0 beta build of marlin and it solved all my issues with this, but install it at your own risk because it is indeed a beta build. You can just set it in your slicer software such as cura, it should be under cooling in cura, and any other software. but if im honest these printers with the current fan setup, you almost need that 100% fan speed when you are printing. There's mods you can do to add more fans and run them slower. s...

you can try switch all the endstop code to true that i posted. I also just checked my endstops on my printer the only one i see that lights up is the z end stop.
